lOCO tAQUERIA pop-UP
In the summer of 2018, Cisco Brewery partnered with Loco Taqueria to build out a pop-up beer garden right in the heart of Boston’s Seaport. Cisco provided their award-winning craft beer and wine, while Loco served as the food vendor, cooking up tacos and dishing out guac. Over the course of the summer, the beer garden operated four days a week and saw about 300,000 visitors.
I had the opportunity to lead the design and build of Loco’s Summer Taco Shack.
Design & Build
We were only allotted 240 sq. ft, so my challenge was designing a space that accommodated enough kitchen area. I worked directly with the Culinary Director, Nick Dixon to layout the equipment and workspace. Our plan was to have an employee at the register, an employee at the pickup window, and three cooks.
The structure needed to align with Boston’s fire code while also fulfilling the health department requirement that all kitchen surfaces need to be washable. The frame was fire retardant plywood that was then lined with Class A Fire Rated Sheet Rock and FRP.
